Oh Oh Oreo Turtle Cheesecake |

This is one recipe you want to try if you love cheesecake in an Oreo cookie crust.....caramel & chocolate.....oh my! This requires a springform pan. Ingredients:
1 cup pecans... finely chopped... divided (or nuts of choice, chopped & divided) |
2 cups oreo chocolate cookie crumbs |
6 tablespoons butter, melted |
1 - 14oz bag caramels(unwrapped - duh!) |
1/2 cup milk |
3 (8oz) packages softened cream cheese |
3/4 cup white granulated sugar |
1 tablespoon vanilla |
3 eggs |
2 oz. semisweet baking chocolate (bakers brand) |
Directions:
1. Mix crumbs, 1/2 cup of nuts and butter; press into bottom & sides in a 9-inch springform pan. 2. Place caramels & milk in small bowl 3. Microwave on high for 3 minutes - or until caramels are completely melted. 4. Pour half of the caramel mixture into crust. 5. Refrigerate for 10 minutes 6. Cover and reserve remaining caramel mixture in refrigerator for later use. 7. Beat cream cheese, sugar and vanilla. 8. Add eggs, one at a time, mixing on low speed after each addition just until blended. 9. Pour over caramel mixture in crust. 10. Bake at 300 degrees F for 65-70 minutes or until center is almost set 11. Run knife around side of pan to loosen cake. 12. Cool before removing from side of pan 13. Refrigerate 4 hours or overnight 14. Heat reserved caramel mixture just before serving cheesecake, drizzle over cheesecake 15. Sprinkle with remaining 1/2 cup pecans 16. Melt chocolate as directed on package; drizzle over cheesecake 17. Store any leftovers in refrigerator......yeah right!
