Ingredients:
1 pound dry beans
14 oz 7-up
1 14-1/2oz can tomatoes
8 slices bacon,diced
2 teaspoons salt
1/2 teaspoons pepper
1 onion,chopped
1 sweet green pepper,chopped
4 celery stalks(destring) chopped
1 8oz can tomato sauce
1/2 cup molasses
1/4 cup brown sugar
1/2 cup catsup
1 tablespoon mustard
1 tablespoon worcestershire sauce
2 teaspoons vinegar
1 2oz can mushroom pieces
Directions:
1. Cleanse and soak the beans overnight.
2. Next morning, rinse them very well.
3. In large pan combine beans,7-up,tomatoes,bacon,salt,and pepper.
4. Cover and simmer for 1 hour.
5. Add onion,green pepper,celery,tomato sauce,molasses,brown sugar,catsup,mustard,Worcestershire,and vinegar.
6. Cover and simmer another hour.
7. Add mushroom pieces.
8. Place in your Grandmother's ole' bean pot,cover and bake in a slow oven of 250 degrees for 3 to 4 hours.
9. Remove cover and bake one more hour.
10. Serve along side: Brisket,slaw,Texas toast,apricot sauce,tea,or a good cold beer.
11. Note: I have found if I don't cook the beans some before I add the sweets,that the beans do not get soft enough and stay a bit grainy.
12. There was a story told to me as a kid.I was asked by my Dad, You know how the Cimarron River got its name,don't you,Sis? I always cherished his stories and said , Nope. He proceeded to tell me that there was an old cowboy driving cattle along that way,sat down by the river and stopped to cook himself some grub,placed the beans in an ole' kettle,and watched them...they never got done.

14. He kicked at the dirt with his boot,slapped his hat against his leg,trail dust flying ever which way,and said, Simmer on.. Dang ya'.. Simmer on!! Got on his horse,went on his way,his stomach rubbing on his backbone.
