Ingredients:
2 1/4 c. unsifted flour |
1 1/2 c. sugar |
2 tsp. baking soda |
1 1/2 tsp. cinnamon |
1 1/2 tsp. nutmeg |
1/2 tsp. salt |
1 c. vegetable oi |
3 eggs |
1/2 c. milk |
2 c. shredded carrots |
3/4 c. chopped nuts |
1/2 c. raising (optional) |
1 c.flaked coconut |
frosting |
3 oz. softened cream cheese |
2 t. softened butter |
2 t. milk |
1/4 tsp. vanilla |
dash salt |
2 1/4 c. powdered sugar |
Directions:
1. Preheat oven to 325 degrees. 2. Mix dry ingredients together. 3. Add oil,eggs,milk and carrots. 4. Beat on high for 2 minutes. 5. Stir in coconut,nuts and raisins. 6. Bake for 55-60 minutes. 7. Frosting: 8. Cream butter,milk ,vanilla,cream cheese and salt. 9. Add powdered sugar and beat until right consistency. 10. Frost cooled cake. |
