This is a recipe that has been in my family for many years. A dear friend, who was blind for most of her life, shared it with us from her memories as child watching her mother make it. When my mom would make it for us she would sometimes use her homemade crabapple jelly to fill it with. Ingredients:
5 eggs |
1 c. sugar |
5 tbsp. water |
1 tsp. vanilla |
1 c. flour |
1 tsp. baking soda |
pinch of salt |
powdered sugar |
jelly of your choice |
Directions:
1. Beat together eggs, sugar, water, and vanilla. 2. Add flour, soda and salt. 3. Grease a jelly roll pan lined with wax paper. 4. Pour dough in pan. 5. Bake 25 minutes in a 350ยบ F oven. 6. Empty pan onto a towel sprinkled with powdered sugar. 7. Put on jelly and roll up while still warm. 8. Leave wrapped up until cool. |
