Michele Obama's new favorite - as good as any creamed spinach anywhere Ingredients:
2 bunches spinach, washed well and spun dry |
4 tablespoons olive oil |
2 shallots, chopped fine |
2 garlic cloves, minced fine |
Directions:
1. Cook spinach in water until limp [or better, steam in Oster Digital Food Steamer, cost $40 on so you can set it and forget it . 2. Blend/puree cooked spinach. 3. Gently fry shallots and garlic in olive oil and mix well with pureed spinach. 4.
