A great treat for everyone! You can add 55g of hazelnuts if you prefer but I'm not a big nut eater. :) Ingredients:
55 g raisins (chopped) |
125 ml orange juice |
225 g butter, softened |
140 g caster sugar |
1 egg yolk (lightly beaten) |
2 teaspoons vanilla extract |
225 g plain flour |
5 g salt (a pinch roughly) |
55 g rolled oats |
Directions:
1. Preheat oven to 190 degrees Celsiius (Gas 5). 2. Line 2 baking trays. 3. Put raisins in a bowl; add orange juice and soak for 10 minutes. 4. Put butter and sugar into a bowl; mix well with a wooden spoon. 5. Beat in the egg yolk and vanilla extract. 6. Sift together the flour and salt into the mixture; add rolled oats. 7. Drain the raisins; add to the mixture and stir until thoroughly combined. 8. Scoop tablespoons of the mixture; place onto lined baking trays. 9. Flatten lightly with a fork. 10. Bake for 12 to 15 minutes or until golden brown. 11. Cool on baking sheets for 5 to 10 minutes. 12. Transfer to a wire rack to cool completely. |
