Oaty Coconutty Peanut Butter Balls |

A perennial kid-pleaser, especially for moms who keep sweets to a minimum. Actually quite healthy and earthy, and *just* sweet enough. Of course, you can always add more sugar. ;) Ingredients:
1 cup crunchy peanut butter |
1/2 cup rolled oats |
1/4 cup whole wheat flour |
1/2 tablespoon molasses |
2 tablespoons sweetened flaked coconut |
1 cup sweetened flaked coconut (for coating) |
2 tablespoons extra virgin coconut oil |
2 tablespoons honey |
1 tablespoon unsweetened cocoa |
1 tablespoon sugar (i substitute xylitol) |
Directions:
1. Combine everything except the extra cup of shredded coconut in a medium bowl. I like to use a knife instead of a spoon to combine. 2. Using fingers, roll into 1-2 balls and roll/press to coat in the coconut. Place in small muffin papers and refrigerate for at least an hour to firm up. |
