The dough keeps overnight so makes a quick and filling breakfast. Ingredients:
1 1/2 cups oatmeal |
1/2 cup milk |
1 cup flour |
1 teaspoon cinnamon |
1 teaspoon baking powder |
1 teaspoon baking soda |
2 cups yogurt |
2 tablespoons peanut butter |
1 teaspoon vanilla |
3 egg whites |

Directions:
1. Soak oatmeal in the 1/2 cup milk. 2. Mix the dry ingredients in one bowl and the wet in another. 3. Combine all the bowls together. 4. Add milk until it is the right consistency. 5. In a frying pan over medium heat, cook the pancake until the edges pull away from the pan about 5 minutes. 6. Flip the pancake and cook the second side for about 1 minute. 7. Be careful because it burns easily. |
