Healthier than regular oatmeal cookies Ingredients:
2 cups whole wheat flour |
1/2 cup ground flax seeds |
1 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/2 teaspoon cardamom |
1/2 cup butter (room temperature) |
1/2 cup natural cane sugar |
2 eggs |
1/2 cup honey |
1 teaspoon vanilla extract |
1 small apple, peeled & chopped |
1/2 cup raisins |
1/2 cup chopped apricot |
1 1/2 cups flaked coconut |
3 cups rolled oats |
1/4 cup applesauce |
Directions:
1. Preheat oven to 350. 2. Stir together flour, salt, baking soda and spices. 3. In a mixing bowl, beat butter and sugar together. 4. Add in honey, eggs, and vanilla. 5. Slowly add in dry mixture and beat together. 6. Stir in oats, applesauce, coconut, and fruit. 7. Drop by spoonfuls onto a greased baking sheet. 8. Bake 12-14 minutes. |
