I remember Mom making these whenever we would go camping. They are so light and flaky, and much easier than trying to make oatmeal over a camp fire. Ingredients:
2/3 cup butter, melted |
1/3 cup milk |
1 egg |
1 1/2 cups flour |
1 1/4 cups quick oats, uncooked (or 1 1/2 c. old fashioned oats) |
1/4 cup sugar |
1 tablespoon baking powder |
1 teaspoon cream of tartar |
1/2 teaspoon salt |
1/2 cup raisins or 1/2 cup currants |
Directions:
1. In a large bowl, combine dry ingredients: flour, oats, sugar, baking powder, cream of tarter and salt. 2. In a small bowl, combine wet ingredients: butter,milk and egg, 3. Add wet ingredients to dry ingredients and mix, only until moist. 4. Add raisins (or currents). 5. Shape into a ball. 6. Pat out on a lightly floured board into an 8 inch circle. 7. Cut into 8-12 wedges. 8. Bake on a greased cookie sheet in a 425 degree oven for 12-15 minutes or until brown. |
