This is a yummy but different oatmeal cookie recipe that my mom makes. Don't let the batter freak you out - it's supposed to be dry and crumbly! I usually cut the recipe in half - the time consuming part is forming the cookies. Also, I undercook mine a little so that when they cool they are still nice and soft.
Ingredients:
2 cups rolled oats
2 cups flour
1 teaspoon baking soda
1 tablespoon hot water
1 cup shortening or 1 cup margarine, softened
1 cup brown sugar
1 cup white sugar
1 teaspoon cinnamon
1/2 teaspoon salt
powdered sugar
Directions:
1. Dissolve baking soda in hot water.
2. Combine all ingredients, including baking soda/water mixture, mix well.
3. Using your hands (or some other creative way), form balls of dough.
4. Roll balls in powdered sugar.
5. Bake at 350 degrees for about 10 minutes on a lightly greased cookie sheet.
