I slightly tweaked this healthy and delicious recipe from a book written in the '90's by Robert Haas, called Eat to Win . This is our favorite breakfast - no adding of sugar or milk necessary! I add 2-3 ice cubes to the pan after the cereal is cooked but before putting it into bowls; this both cools it down enough to eat and makes the oatmeal VERY creamy.****UPDATE***: Since submitting this recipe, we have discovered how much better it is with steel cut oats! Changes I now make: 2 cups water to 1/4 cup steel-cut oats, extra cinnamon (to taste), add 1 tablespoon ground flax seed. Cook the oats for 20 minutes, then add apples and cook for 5 minutes more. Add bananas, flax seed & seasonings after you remove from heat. Omit the ice cubes, but add extra hot water if needed to make creamy. Ingredients:
1 cup water |
1/2 cup orange juice |
1/4 cup raisins |
1 medium-to-large apple, cut into small pieces (i like red delicious) |
2/3 cup regular oatmeal (not instant) |
1/3 cup raisin bran cereal (original recipe calls for regular bran) |
1/4 teaspoon cinnamon |
1 medium banana, sliced in half lengthwise, then chopped |
1 -3 ice cube (optional) |
Directions:
1. Combine the water and orange juice in a medium pan. 2. Add raisins and chopped apples; bring to a boil. 3. Stir in oatmeal and Raisin Bran, reduce heat, and cook for 6 minutes. Stir every 2 minutes. 4. Remove from heat; mix in cinnamon and banana pieces. 5. Optional: Add ice cube(s) and stir until they are gone. 6. I like this smooth and creamy; add a little hot water if too dry. |
