Ingredients:
1/2 cup butter |
1 cup regular oats, uncooked |
1/4 cup milk |
1 egg, beaten |
1 cup all-purpose flour |
1/2 cup sugar |
1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1 teaspoon ground cinnamon |
1 teaspoon ground nutmeg |
1/2 cup raisins |
1/2 cup chopped pecans |
1 1/2 teaspoons vanilla extract |
Directions:
1. Melt butter in top of a double boiler over simmering water; add oats and milk, stirring well. Cover and cook 15 minutes. Remove from heat, and cool slightly; stir in egg. 2. Sift together flour, sugar, baking powder, soda, salt, cinnamon, and nutmeg in a small mixing bowl; add to oatmeal mixture, stirring well. Stir in raisins, pecans, and vanilla. 3. Drop dough by heaping teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 350° for 15 minutes. Cool slightly on cookie sheets. Remove to wire racks to cool completely. |
