I want to thank alifranroy for posting the Vanishing Oatmeal Cookie recipe. I adapted this recipe from it and it worked out well. I used a yogurt containing .1% fat and 48 calories per 100 grams. I also think the brown sugar could be cut in half and still be good. I also think that replacing the raisins with chocolate chips would be a great idea. Ingredients:
3/4 cup yogurt |
1/2 cup applesauce |
1/2 cup brown sugar |
1/4 cup white sugar |
2 eggs |
1 tsp. vanilla |
3/4 cup all purpose flour |
3/4 cup whole wheat flour |
1 tsp. baking soda |
2 tsp. cinnamon |
1/2 tsp. salt |
3 cups oatmeal |
1 cup raisins |
Directions:
1. preheat oven to 190 c. 2. beat sugars, yogurt and applesauce. 3. add eggs and vanilla and beat well. 4. in separate bowl, combine flours, baking soda, cinnamon and salt. Mix well. 5. Add dry to wet. 6. gently stir in oatmeal and raisins. 7. drop on baking ungreased non stick baking tray. 8. bake for 10-12 minutes until golden brown. |
