1/2 cup butter |
1/2 cup shortening |
1/2 cup sugar |
1 cup packed brown sugar |
2 teaspoons vanilla |
1/4 teaspoon almond extract |
3/4 teaspoon cinnamon |
1/8 teaspoon clove |
1/4 teaspoon nutmeg |
1 teaspoon salt |
1 teaspoon baking soda |
1 large egg |
6 tablespoons light corn syrup |
2 tablespoons milk |
3 cups quick-cooking oats |
1 1/2 cups flour |
1 cup raisins |
1 cup chopped pecans or 1 cup walnuts |
Directions:
1. Preheat oven to 375°. 2. In a large bowl, cream together the butter, shortening, sugars, extracts, spices, salt and baking soda, beating until fairly smooth. 3. Beat in the egg, scraping the bowl, then beat in the corn syrup and milk. Stir in the oats, flour, nuts and raisins. 4. Drop the dough by the tablespoonful onto greased baking sheets. 5. Bake the cookies for 11 minutes, until they're a light golden brown. Remove them from the oven and transfer to a wire rack to cool. |
