Got this recipe from a friend of mine. It was a family favorite from the first time we tried it and I have made these many times since. I think the key reasons this tastes better than most oatmeal raisin cookies is it uses almond flavoring as well as vanilla flavoring, and 2 kinds of raisins - regular and golden Ingredients:
1 cup unsalted butter, softened at room temperature |
1 cup sugar |
1 cup packed brown sugar |
2 eggs |
1/2 teaspoon vanilla |
1/2 teaspoon almond flavoring |
2 cups flour |
1 teaspoon baking soda |
1 teaspoon salt |
3 cups oats |
1 1/2 cups raisins |
1 1/2 cups golden raisins |
Directions:
1. In separate bowl, mix flour, baking soda and salt. Set aside. Beat butter and sugars together, until fluffy. Mix in eggs (one at a time), vanilla and almond. Then slowly mix in the flour mixture until well blended. Stir in oats and raisins. 2. Drop cookies onto a parchment-lined baking sheet - slightly flatten dough. 3. Bake in a preheated 325 degree oven for 15 minutes, or until golden. Don't let raisins burn. |
