I made these last year to give out as Christmas gifts. Ingredients:
1 cup all-purpose flour |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1 teaspoon baking soda |
1/2 teaspoon salt |
3/4 cup raisins |
2 cups rolled oats |
3/4 cup brown sugar, packed |
1/2 cup white sugar |
Directions:
1. Combine flour, ground cinnamon, ground nutmeg, baking soda, and salt; set aside. 2. In a 1 quart, wide mouth jar, layer ingredients in the following order: Flour mixture, raisins, rolled oats, brown sugar, and white sugar. (It's a tight squeeze so make sure you firmly pack each layer). 3. Attach a tag with these instructions: Oatmeal Raisin Spice Cookies: Line cookie sheets with parchment paper; Empty jar of cookie mix into a large bowl; Mix together thoroughly; Add in 3/4 cup softened butter or margarine; Stir in one beaten egg and 1 teaspoon vanilla; Mix until well blended; Shape into walnut-sized balls; Place on parchment lined cookie sheets 2 inches a part; Bake at 350 degrees for 11 to 13 minutes or until edges are lightly browned; Cool 5 minutes on cookie sheet; Transfer cookies to wire racks to finish cooling. |
