Great in the lunch box! Ingredients:
2 cups old fashioned oats |
1/2 cup firmly packed brown sugar |
1/2 cup splenda sugar substitute |
1 cup all-purpose flour |
1/4 teaspoon salt |
1 cup raisins |
3 egg whites |
1/2 cup canola oil |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 375°. 2. Place all ingredients in a large bow, mix well. 3. Spray a cookie sheet with nonstick spray. 4. Drop 1 tablespoon full of batter, 2-inches apart on cookie sheet. 5. Dampen fingers lightly with cold water and press batter to flatten into 2-inch rounds. 6. Bake until cookies are light golden, but not brown, about 12-14 minutes. 7. Cool on pan for 3 minutes, then transfer to a wire rack to cool completely. Store in an airtight containter. |
