This is a very good tasting pie. Light or dark corn syrup may be used. Ingredients:
2 eggs, beaten |
3/4 cup corn syrup |
3/4 cup packed brown sugar |
1/2 cup flaked coconut |
3/4 cup quick cooking oats |
1/4 cup butter |
salt to taste |
1 recipe pastry for a 9 inch single crust pie |
Directions:
1. Mix together eggs, corn syrup, brown sugar, coconut, oats, butter or margarine, and salt. Pour into the unbaked pie shell. 2. Bake at 325 degrees F (165 degrees C) for 45 minutes, or until golden in color and knife inserted in center comes out clean. |
