Oatmeal Pecan Chocolate Chip Cookies |

This is lower calorie version of a recipe my mother used to make. Ingredients:
3/4 cup oat flour |
1/2 cup all-purpose flour |
1 cup old-fashioned oatmeal |
3/4 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
3/4 cup splenda sugar substitute |
1/2 cup brown sugar |
1/3 cup butter, softened |
1 1/2 teaspoons vanilla extract |
1 large egg |
1/4 cup pecans |
1/4 cup miniature semisweet chocolate chips |
Directions:
1. Preheat oven to 350. 2. Mix first 6 ingredients. 3. Mix next 5 ingredients (through egg) in a separate bowl. 4. Gradually add flour mixture to eggs/butter. 5. Fold in nuts and chocolate chips. 6. Drop dough in tablespoons onto cookie sheet. 7. Bake for 8 minutes. |
