Oatmeal Pancakes with Orange Cheese Sauce

These delicious pancakes are great for bodybuilders or anyone health conscious. They're full of protein and fiber, low on simple carbohydrates and fat.
Ingredients:
2 eggs (or 1/2 c egg substitute)
1/2 cup cottage cheese
1/2 cup oatmeal
2 envelopes artificial sweetener (or 4 t sugar)
1/2 teaspoon vanilla
1/4 teaspoon pumpkin pie spice
1 tablespoon coconut (or more)
1/2 cup cottage cheese
1 -2 tablespoon orange juice
1 envelope artificial sweetener or 2 teaspoons sugar
1/2 teaspoon vanilla
Directions:
1. blend sauce until smooth in blender or food processor.
2. Beat eggs in blender.
3. Add cottage cheese and beat.
4. Add sweetener, vanilla and spice, blend.
5. Add oatmeal and coconut.
6. Blend till combined.
7. Pour 1/2 mixture into pan and make 1 pancake.
8. Turn just as bubbles being to form.
9. Use remaining half for second pancake.
10. Spread sauce on pancakes and top with thawed or fresh blackberries and toasted slivered almonds.
