A healthier version of pancakes (but tastes awesome!) Some whole grains to stop that pancake sugar high! The lemon sauce I included is delish but you can have any topping you like! Ingredients:
1 cup whole wheat flour |
1 cup rolled oats |
1 tsp baking powder |
1 tsp baking soda |
2 tbsp sugar |
1 tsp salt |
2 eggs |
3 tbsp vegetable oil |
2 cups buttermilk |
for the lemon sauce |
1/2 cup sugar |
1 tbsp cornstarch |
1/8 tsp salt |
1 cup boiling water |
2 tbsp butter |
2 tbsp lemon juice |
1 egg yolk |
Directions:
1. Combine flour, rolled oats, baking powder, baking soda, sugar and salt 2. Combine eggs, oil and buttermilk 3. Add liquid ingredients to dry and mix only until blended 4. Cook pancakes on hot, lightly oiled griddle 5. Serve with hot maple syrup, honey-butter or lemon sauce 6. Instructions for Lemon Sauce 7. Mix sugar, constarch and salt 8. Add boiling water slowly stirring constantly 9. Boil for 5 minutes 10. Take from heat and add butter, lemon juice and egg yolk |
