Favorite oatmeal pancake recipe. Ingredients:
3/4 cup oatmeal |
1 cup low-fat buttermilk |
1/2 teaspoon baking soda |
1/4 cup flour |
1/2 teaspoon sugar |
1/4 teaspoon salt |
1 egg |
Directions:
1. Soak oatmeal in buttermilk at least 15 minutes. Mix flour, sugar, salt, and soda, and stir into oatmeal mixture. Stir in beaten egg. 2. Add blueberries if desired. 3. Cook on hot griddle sprayed with vegetable oil. Makes 8 4-inch pancakes. |
