Oatmeal Pancakes

From Betty Crocker's Healthy Heart Cookbook
Ingredients:
1/2 cup quick-cooking oats
1/4 cup all-purpose flour
1/4 cup whole wheat flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
1/4 cup low-fat milk
1/4 cup egg substitute or 2 egg whites
2 tablespoons safflower oil
Directions:
1. Beat all ingredients with hand beater or wire whisk just until smooth (for thinner pancakes stir, in additional 2-4 TBS milk.
2. Spray griddle or small skillet with cooking spray; heat griddle to 375F
3. For each pancake, pour slightly less than 1/4C batter onto hot griddle.
4. Cook pancakes until puffed and dry around the edges.
5. Turn and cook other side until golden brown.
