I love the orange flavor of these, different for a muffin. Yummy! I got this recipe from an old (1980's) Canandian cookbook called Muffin Mania . I usually double or triple the recipe and freeze the extras.(Prep time includes soaking time.) Ingredients:
1 cup oats, soaked in both |
1/2 cup orange juice, and |
1/2 cup boiling water, for 15 minutes |
1/2 cup margarine, softened |
1/2 cup white sugar |
1/2 cup brown sugar |
2 eggs, beaten |
1 cup raisins |
1 teaspoon vanilla |
1 cup all-purpose flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
Directions:
1. Cream margarine and sugar. 2. Beat in eggs and stir in oat mixture. 3. Stir in raisins and vanilla. 4. Add flour, baking powder, baking soda and salt. 5. Stir until moistened. 6. Pour into well greased muffin cups. 7. Bake at 350 degrees for about 20 minutes. |
