Ingredients:
1 cup quick-cooking oats, uncooked |
1 cup buttermilk |
1 egg, beaten |
1 cup all-purpose flour |
1/2 cup firmly packed brown sugar |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1 teaspoon salt |
1/2 cup butter or margarine, melted and cooled |
Directions:
1. Combine oats and buttermilk in a medium mixing bowl; let stand 30 minutes. 2. Add next 6 ingredients to oats mixture, mixing well. Stir in melted butter. 3. Spoon batter into greased muffin pans, filling two-thirds full. Bake at 400° for 25 minutes or until golden brown. Cool slightly; remove from pan, and serve warm. |
