First time that I made this particular muffin over the weekend and family loved them. Not only did they have a delicious flavor but they were quite moist. Recipe came from Colorado Cache Cookbook which is a favorite of mine. Ingredients:
2 cups quick cooking oats |
2 cups plain yogurt |
2 eggs |
1 cup brown sugar, packed |
1 cup vegetable oil |
2 cups flour |
2 tsp baking powder |
1 tsp salt |
1 tsp baking soda |
1 cup chopped walnuts (optional) |
1/4 cup cinnamon chips |
Directions:
1. Mix all of the ingredients. 2. Spoon into greased muffin tins. 3. Bake at 400 degrees for 20-25 minutes. 4. Recipe makes 16 muffins |
