These are adapted from another recipe here. I wanted to use whole eggs and 2% milk. I also wanted to add raisins. Ingredients:
1 cup old fashioned oats |
1 cup raisins |
1 cup 2% low-fat milk |
1 cup whole wheat flour |
1/2 cup brown sugar |
1/2 cup unsweetened applesauce |
2 eggs |
1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
Directions:
1. Put oatmeal, raisins and milk in a large bowl to soak for 1 hour. 2. Add the rest of the ingredients and mix well. 3. Drop into lightly greased miffin pans and bake at 400 degrees for 15 to 20 minutes. |
