Almost nonfat, high fiber, high protein. You can also add dried or frozen fruit, nuts, or other mix-ins. Ingredients:
1 cup skim milk |
1 cup quick cooking oats |
1/4 cup eggbeaters |
1/4 cup nonfat plain yogurt |
13 tbsp whole wheat flour |
3 tbsp white bean flour |
1/8 cup brown sugar |
1/8 cup molasses |
2 teaspoons baking powder |
1/2 teaspoon salt |
Directions:
1. Combine milk and oats, let soak 15 minutes. 2. Mix rest of dry ingredients. 3. Mix wet ingredients, then add to dry mix. 4. Stir until combined. 5. Spray muffin cups, fill 2/3 full. 6. Bake at 425 for 20-25 minutes. |
