Modified from a recipe I found; tried to make less calories, more fiber, but still tasty Ingredients:
1 cup bisquick reduced-fat baking mix |
1/2 cup fiber one cereal, crushed |
1 1/2 cups rolled oats |
1/2 cup splenda granular |
2 teaspoons cinnamon |
1 egg |
2 tablespoons canola oil |
2 tablespoons applesauce |
1/2 cup skim milk |
4 teaspoons sugar-free jelly, any variety |
Directions:
1. Heat oven 375. 2. Spray muffin tin with non-stick spray. 3. Mix dry ingredients (bisquick thru cinnamon). 4. Mix egg, oil applesauce and milk. 5. combine wet and dry ingredients until just mixed (do not overmix). 6. Spoon batter into cups - fill 1/3 full. 7. place 1/2 t jelly on top of batter. 8. Spoon more batter into cup. 9. Bake for 20-25 minutes. |
