Just like Grandma used to make–soft and chewy with just the right amount of sweetness. Ingredients:
2 cups sugar |
1 cup vegetable oil |
1/3 cup molasses |
2 large eggs |
2 cups all-purpose flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon ground cinnamon |
2 cups quick-cooking oats, uncooked |
1 cup raisins |
1 cup flaked coconut (optional) |
Directions:
1. Preheat the oven to 350°. Combine first 4 ingredients in a large mixing bowl. Beat at medium speed of an electric beater until smooth. 2. Combine flour and next 4 ingredients; stir well. Add to sugar mixture, mixing well. Stir in oats, raisins, and, if desired, coconut. 3. Drop dough by heaping teaspoonfuls onto lightly greased cookie sheets. Bake at 350° for 10 minutes. Cool slightly on cookie sheets; remove cookies to wire racks, and let cool completely. |
