This is my favorite breakfast. It's healthy, satisfying, comforting, quick and easy. Basically, it's a savory version of oatmeal porridge. It makes one generous portions or two if you're not too hungry. Ingredients:
1,5 dl or a little less than 1 cup of rolled oats |
5 dl or 2 cups of water, milk (i use oat milk) |
1 tbs of raisins |
1/2 ts of cinnamon |
1/2 ts of cardamom |
1/4 ts of coriander |
a pinch of saffron or 1/2 ts of turmeric or both |
a pinch of salt |
1 tbs of chopped walnuts |
a drizzle of honey |
Directions:
1. Put the milk (or water if you prefer) in a non stick pot 2. Add everything but the walnuts and honey 3. If you can afford it, use a pinch of saffron. It imparts a fantastic aroma. Otherwise, turmeric will give your exotic porridge a nice yellow color as well. I use both because turmeric is thought to be a anti-carcinogen 4. Bring to the boil (slowly if you use milk - otherwise it will burn) 5. Boil for 5-10 min depending on the type of rolled oats you use 6. Serve with the chopped nuts and a drizzle of honey for a little extra sweetness and energy if you like |
