This was in my recipe collection. I'm not exactly sure where I got it from, but it sounds interesting and different, which is why it appealed to me. Ingredients:
2 eggs, separated & at room temperature |
1 cup brown sugar |
1 tablespoon butter, melted |
2 teaspoons baking powder |
1 teaspoon vanilla |
3/4 teaspoon salt |
1/2 teaspoon nutmeg |
2 1/2 cups rolled oats |
Directions:
1. Preheat oven to 350*. Lightly grease your cookie sheets (I prefer to use parchment paper) . 2. Beat egg whites until stiff. 3. In another bowl, blend the sugar & butter. Add the egg yolks, baking powder, vanilla, salt and nutmeg, stirring together. Stir in the oats. 4. Gently fold in the egg whites. 5. Drop by 1/2 teaspoon on cookie sheet. Bake at 350* for 10 minutes, until risen and light brown. 6. Store airtight or freeze. |
