Not your grandma's chewy oatmeal cookie. These are thin and lacy and wonderfully tasty with coffee or tea. Ingredients:
1 cup of quick-cooking oatmeal |
1 1/2 cups of dark brown sugar, firmly packed |
1 egg beaten |
1 teaspoon of vanilla |
1/2 teaspoon of salt |
1/2 cup of melted butter |
Directions:
1. Preheat oven to moderate heat (350). 2. Run through the fine blade of your meat grinder, one cup of quick cooking oatmeal. (Alternately grind to a powder in your food processor) 3. Add to the oatmeal flour, the sugar, the egg, the vanilla, the salt and the butter. 4. Mix well until you have a thick dark brown batter. 5. Drop by the half teaspoonful on buttered cookie sheets, 3 inches apart. 6. these cookies spread into large thin circles while baking. 7. Bake for 12 mintes. 8. Remove cookies from pan with a spatula while still warm. 9. As soon as they cool, they harden and will stick. 10. If that happens, stick the cookie sheet back in the oven for a few seconds until soft enough to remove. 11. Let cookie sheets cool completely before putting on the next batch of cookies. 12. Store in an air tight container. |
