Oatmeal-Honey Loaf (Deaf Smith Cookbook)

This is one of my favorite bread recipes! No kneeding, by the way.
Ingredients:
1 cup oats (not instant)
1 cup boiling water
2 1/4 cups whole wheat pastry flour
2 1/2 teaspoons baking powder
1 teaspoon sea salt
5 tablespoons powdered milk (non-instant)
1/4 cup melted butter or 1/4 cup oil
3 tablespoons honey
1 egg
2/3 cup water
Directions:
1. In large bowl combine oats and boiling water; stir until mixed. Let sit 2 hours; add butter and honey.
2. Sift together flour, baking powder and salt; add milk powder.
3. Beat egg and water. Add flour mixture; add this mixture to the oatmeal and mix well (do NOT overmix).
4. Turn into an oiled 9 x 5 loaf pan and bake at 350 F for 60-70 minutes, until crust is golden. Turn onto rack to cool.
