This protein and vitamin rich dish is creamy and hearty and will certainly stick to your ribs on a cold morning. If you don't like the flavor combo to start with, though, you won't enjoy this.... it is fun and flavorful, but, it's not for everyone. Read more ....don't worry, though, I won't be doing a Beetles (sic..on purpose! ;) oatmeal, for the rest of you! ;) ick! :)
Ingredients:
1 cup steel cut oats
2-4 cups water
1/2 cup creamy peanut butter
2 large, ripe bananas, mashed
1t honey or brown sugar(to sweetness preference)
about 1/2 cup half and half or milk
2 slices bacon, fried crisp and crumbled(optional, but, come on! if you don't top with bacon, add a dash of salt to oatmeal in the last 5 minutes of cooking)
Directions:
1. Bring water to a boil and add oats.
2. Reduce temperature to a simmer and cook uncovered and unstirred, for about 20-25 minutes.
3. Stir well and add peanut butter, bananas, honey, salt(if using), and half and half and stir well.
4. Continue to cook over low heat until warmed through and has reached desired consistency.
5. Sprinkle with crumbled bacon upon serving.
6. *I just couldn't bring myself to use Pepsi for the liquid..but, I THOUGHT about it! :)
