Taken from The Spice Cookbook by Day & Stuckey (1964). These are absolutely delicious! Ingredients:
1 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon ground nutmeg |
1 cup shortening |
2 cups sugar |
2 eggs |
1 cup raisins |
3/4 cup chopped nuts |
1 teaspoon grated lemon rind |
1 tablespoon lemon juice |
1 1/2 cups all-purpose flour |
3 cups quick-cooking oatmeal |
Directions:
1. In a large mixing bowl, combine baking soda, salt, nutmeg, and shortening. Mix. 2. Continue mixing, and slowly add 1 cup of the sugar. Then add 1 of the eggs. 3. Repeat with the 2nd cup of sugar and the 2nd egg. 4. Add raisins, nuts, lemon rind, and lemon juice. Mix. 5. In a separate bowl combine flour and oatmeal. Mix. 6. Slowly add flour/oatmeal mixture to first bowl while mixing. 7. Once dough is well mixed, chill in the refrigerator for about 1 hour. 8. Roll dough into 1-inch diameter balls. Place onto a baking sheet 3 inches apart on center. 9. Bake at 350 for 12-15 minutes, or until dough is just set in the center. Cool on wire racks for about 30 minutes. |
