This is a Little Debbie look-a-like recipe that my friends all LOVE and beg me to make. Ingredients:
1 c. margarine |
3/4 c. dark brown sugar |
1/2 c. sugar |
1 tbsp. molasses |
1 tsp. vanilla |
2 eggs |
1 1/2 c. flour |
1/2 tsp. salt |
1 tsp. baking soda |
1/2 tsp. cinnamon |
1 1/2 c. oats |
2 tsp. boiling water |
1/4 tsp. salt |
1 7oz. jar marshmallow cream |
1/2 c. shortening |
1/2 c. powdered sugar |
1/2 tsp. vanilla |
Directions:
1. Cream Margarnie, sugars, molasses, vanilla and eggs on medium speed for 3 minutes. 2. In a seperate bowl combine flour, salt, soda, cinnamon and oats. 3. Slowly add the dry ingredients to the wet mixture on low speed. 4. Drop by tablespoonfulls onto an ungreased cookie sheet 2-3 apart. (Batter will spread) 5. Bake at 350 degrees 10-12 minutes, it is important that you do not overbake so they will remain soft. 6. Allow to cool 3-5 minutes on pan and then transfer to a cooling rack. 7. To make the filling combine boiling water and salt in a small cup and set aside. 8. In a mixing bowl combine remaining ingredients and mix on low speed. 9. Pour in salt water and mix once more to combine. 10. Spread filling on the bottom of one cooled cookie and top with another to form a sandwich. 11. Repeat with all cooled cookies. |
