I got this wonderful recipe from a Victorian cookbook I found in a antique store. These scones are so good and perfect with butter and Jam. You can eat them any time of the day. Ingredients:
1 1/2 cups cake flour |
1tbsp baking powder |
1/3 cup quick cooking oatmeal |
1/4 cup butter, cut into small pieces |
2 eggs, well beaten |
1/2 cup cream |
Directions:
1. Stir the flour and baking powder together into a bowl; stir in the oatmeal 2. Rub in butter and beat in the eggs. 3. Make a well in the center and pour in the cream 4. Stir to create a soft, elastic dough 5. On a floured surface, roll the dough out to a 3/4-inch thickness 6. divide the dough in half. 7. divide each half into four and form into rough bisquit shapes 8. place the scones in a moderatley hot, lightly oiled heavy frying pan 9. cook for 10 -12 minuts, turning once as they brown. 10. Serve warm with butter and jam |
