Wonderful cookies with a dark chocolate drizzle on top. Very nice for the holidays - the orange zest is what makes them great. A little high in calories, but butter substitute could probably be used to bring down the count. Adapted from a recipe from called Oatmeal Cranberry White Chocolate Chunk Cookies. Ingredients:
2/3 cup butter, softened |
2/3 cup brown sugar, packed |
2 eggs |
1 1/2 cups rolled oats |
1 1/2 cups all-purpose flour |
1/2 tsp salt |
1 tsp baking soda |
2 tsp orange zest |
1 1/2 tsp vanilla |
1 1/4 cup dried cranberries |
2/3 cup dark chocolate, melted |
Directions:
1. Preheat oven to 347 F (190 C) 2. In a medium bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time. Combine oats, flour, salt, soda, vanilla and orange zest; stir into butter mixture one cup at a time, mixing well after each addition. Stir in dried cranberries. Drop by rounded teaspoons onto ungreased cookie sheets. 3. Bake for 9-11 minutes in preheated oven, or until golden brown. Cool. 4. Melt dark chocolate on stove and use a spoon to drizzle the chocolate onto the cookies. Wait for chocolate to harden. |
