Oatmeal Cranberry Applesauce Muffins |

Whole wheat and oatmeal come together with tangy dried cranberries and cranberry sauce to make a tender and slightly chewy, healthy muffin! Originally from Joy the Baker. Ingredients:
1 1/4 cups whole wheat flour |
1 1/4 cups oats |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1/2 teaspoon cinnamon |
1 cup unsweetened applesauce |
1/2 cup low-fat buttermilk |
1/2 cup brown sugar |
2 tablespoons canola oil |
1 large egg |
3/4 cup dried cranberries |
1/2 cup cranberry sauce |
Directions:
1. Preheat oven to 375 degrees. 2. In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon. 3. In a medium bowl combine applesauce, buttermilk, sugar, oil and egg. Make a well in dry ingredients and add applesauce mixture and dried cranberries. 4. Stir until just moist. 5. Fill muffin cups 2/3 full, adding a tsp of cranberry sauce in the middle of each cup. 6. Bake for 16-18 minutes. |
