These oatmeal cookies are made partially with vegetable oil for healthier fats. Ingredients:
2 cups all-purpose flour |
1/2 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 cup butter or 1/2 cup margarine |
1/2 cup vegetable oil |
1 cup packed brown sugar |
1 cup white sugar |
2 eggs |
1 teaspoon vanilla |
1 teaspoon cinnamon |
3 cups old-fashioned oatmeal |
1 cup raisins |
Directions:
1. Preheat oven to 350 degrees. Sift together flour, baking powder, baking soda, salt, and cinnamon; set aside. 2. In a medium bowl, cream butter, oil, brown sugar, white sugar, eggs and vanilla. Gradually stir in the dry ingredients until well blended. Mix in oatmeal and raisins. Drop 2 teaspoon measurement onto ungreased cookie sheets. (I use parchment paper on my cookie sheets.). 3. Bake for 12-14 minutes in preheated oven until edges are golden. Let set on cookie sheet for a few minutes before transferring to a rack to cool completely. |
