Oatmeal Coconut Muffins

Breakfast on the go, add a yogurt and a cup of juice and we are out the door in minutes.
Ingredients:
1 1/4 cups of boiling water
1/2 teas of salt
1 cup of uncooked oats, quick or old fashioned
1/2 cup of butter
1 cup of firmly packed light brown sugar
1 cup sugar
2 eggs
1 1/3 cup of self-rising flour
1 teas of ground cinnamon
1 1/2 cup of flaked coconut
Directions:
1. Combine water, salt and oats; let stand 20 minutes.
2. Cream butter and sugar; add eggs, beating well.
3. Combine flour and cinnamon, stir into creamed mixture.
4. Add coconut and oat mixture, stir well.
5. Fill in greased muffin cups, 2/3 full.
6. Bake at 350 degrees for 25 minutes.
7. makes 24. Can be frozen easily.
8. Also makes nice mini loaves for Holiday giving or Hostess gifts.
