Oatmeal Cinnamon French Toast |

My current favorite version of French Toast! Slightly crunchy, sweet and spicy. Ingredients:
4 thick slices of day old italian bread (or bread of choice) |
2 eggs |
1/2 cup milk |
1/2 tsp vanilla |
1/2 tsp cinnamon |
1/4 tsp nutmeg |
1/4 tsp ground cardamom (optional) |
1/2 cup quick cooking oats |
1-2 tbsp unsalted butter |
maple syrup |
fresh berries |
cinnamon |
Directions:
1. In a medium sized mixing bowl, whisk together eggs, milk and spices. Place bread slices in bowl and move slices around gently to absorb egg-milk mixture evenly. 2. Put oatmeal in a shallow dish. 3. Melt butter over medium heat in a large nonstick pan. 4. Coat Bread slices on both sides in oats. 5. Fry bread over medium high-heat until golden brown on both sides. 6. Serve sprinkled with extra cinnamon, fresh berries and lots of real maple syrup. |
