A favorite cookie! serving size is estimated as it really depends on size of cookies. Ingredients:
1 cup butter, softened |
1 cup packed brown sugar |
3/4 cup white sugar |
2 teaspoons vanilla |
2 large eggs |
1 1/2 cups all-purpose flour |
1 teaspoon baking soda |
1 1/2 teaspoons cinnamon |
1/2 teaspoon salt |
3 cups large-flake oats (not instant or quick oats) |
1/2 cup miniature chocolate chip |
1/2 cup flaked coconut |
Directions:
1. Set oven to 350°. 2. Line a cookie sheet with foil and lightly spray with non-stick cooking spray. 3. In a large bowl cream the butter with sugars until fluffy. 4. Add in the vanilla and eggs; beat well. 5. In another bowl, blend together the flour, baking soda, cinnamon, salt and oats; mix well to combine. 6. Add the flour mixture to the creamed mixture along with the chocolate chips and coconut; mix well to combine. 7. Drop dough by heaping tablespoonfuls onto prepared baking sheet. 8. Bake for 8-10 minutes (longer for a crispier cookie). 9. Remove to a rack to cool. |
