Oatmeal Choco Chip Icecream Sandwich |

Easy and fun to do with the kids. A wonderful treat they can help make or surprise them after a hot day with this as dessert. Adding the cake flour makes for a better sandwich cookie. Not hard or too soft. Homemade Vanilla bean ice cream would be an ideal addition instead of the store bought too. Ingredients:
1 cup margarine or butter, softened |
1 cup firmly packed brown sugar |
1/2 cup granulated sugar |
2 large eggs |
1 teaspoon vanilla extract |
1 cups all-purpose flour |
1/2 cup cake flour |
1 teaspoon baking soda |
1 teaspoon ground cinnamon |
1/2 teaspoon salt (optional) |
3 cups quaker oats (quick or old fashioned, uncooked) |
1 cup semi-sweet chocolate chips |
about 1 quart vanilla ice cream, softened |
Directions:
1. 1. Heat oven to 350°F. 2. 2. Beat together margarine and sugars until creamy. Add eggs and vanilla; beat well. 3. 3. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and chips; mix well. 4. 4. Drop by rounded tablespoonfuls onto ungreased cookie sheet. 5. 5. Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. 6. 6. To make sandwiches, spread softened ice cream on bottom side of one cookie; top with second cookie. Wrap airtight; freeze for at least 1/2 hour. |
