Oatmeal Carrot Muffins

Another great recipe from Michael Smith. These muffins are so moist and delicious, as well as being good for you, too!
Ingredients:
2 cups all-purpose flour
1 cup oatmeal
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 eggs
1/2 cup vegetable oil
1 1/2 cups plain yogurt
1 teaspoon vanilla extract
1 cup carrot, grated
Directions:
1. Preheat the oven to 350 degrees F.
2. Sift together the flour, oatmeal, baking powder, baking soda, salt, brown sugar, cinnamon and nutmeg.
3. Mix the eggs, oil, yogurt and vanilla in a large mixing bowl.
4. Stir in the carrots and then the dry ingredients.
5. Spoon into 6 jumbo or 12 regular-sized muffin cups.
6. Bake for 30 minutes.
