Oatmeal Cake With Broiled Frosting |

This is one of those old recipes that we all used to love. Still Do! Ingredients:
1 cup quick cooking oats, uncooked |
1 1/2 cup boiling water |
1 cup sugar |
1 cup brown sugar, packed |
1/4 cup butter |
1/4 cup crisco |
2 large eggs |
1 teaspoon vanilla |
1 1/2 cups flour |
1 teaspoon cinnamon |
1 teaspoon baking soda |
1/2 teaspoon salt |
frosting |
6 tablespoons butter |
1/4 cup evaporated milk |
1/2 teaspoon pure vanilla |
2/3 cup brown sugar packed |
1 1/2 cup pecans, walnuts or your choice chopped |
Directions:
1. Measure oats into a mixing bowl, add boiling water, stir and cool. 2. Cream both sugars, butter and shortening and butter. 3. Add eggs and vanilla, beat very well. 4. Sift dry ingredents in batches into the creamed mixture mixing well. 5. Pour into a greased and floured 9x13 pan. 6. Bake in preheated 350 degree oven. 7. While cake is baking, make frosting, have ready. 8. Mix frosting ingredents together and mix well. 9. When cake is done spread frosting on hot cake, place under broiler for a few minutes to brown. 10. Serve with a dollop of fresh whipped cream or cool whip 11. Soooooooo good. 12. ENJOY |
