This cake is good as a dessert, for a brunch, or a delicious way to get your oatmeal in.
Ingredients:
1c. quick oatmeal
1 1/4 c. boiling water
1/2 c. shortening
1 c. white sugar
1 c. brown sugar
2 eggs
1 1/2 c. flour
1 t. baking soda
1 t. baking powder
1 t. cinnamon
1/4 t. salt
Directions:
1. Pour boiling water over oatmeal and let stand for 20 minutes
2. Cream shortening, sugars
3. add eggs
4. sift dry ingredients
5. add alternating with oatmeal mixture
6. place into 9x13 pan
7. bake at 350 for about 50 min.
8. Topping
9. 1/3 c. butter
10. 1/4 c. milk
11. 1/2 c. brown sugar
12. combine in small pan and cook until sugar is dissolved.
13. bring to rolling boil and remove from heat
14. 1/2 c. coconut
15. 1 t. vanilla
16. 1/2 c. nuts (chopped)
17. cool a few minutes
18. pour over cake
19. broil 2-3 minutes until brown
20. remove.
21. Is great ala mode or with cool whip.
