Oatmeal cake you ask? I know I know. This was a cake in practice for many years. Needless to say it was not great but not bad. Read more . I lived in an Amish community and they had a recipe similar but different. So I combined the two and made a cake that is fluffy & topping is sticky with coconut & nutty. This is really good and trust me Yummy. Ingredients:
combine let sit 10 minutes |
1/4 lb oleo (or fleishmans) |
1 cup oatmeal |
1 1/4 cup boiling water |
then add |
1 cup white sugar |
1 cup brown sugar |
2 eggs, beaten |
1 1/3 cup flour |
1 teaspoon baking soda |
1 teaspoon cinnammon |
bake at 350 25-30 minutes |
Directions:
1. Topping: Boil, then place on warm warm cake and place back in warm oven for 10 minutes 2. 5 tablespoons margarine 3. 1 cup brown sugar 4. 1/2 cup pecans, chopped 5. 1/4 c cream or evaporated milk 6. 1 cup coconut 7. 1/4 cup karo syrup |
